Hot chili sauces are a gourmet delicacy and are common throughout the world. Everyone knows the American hot sauce Tabasco, which is made from the hot pepper of the same name. Less well-known, although no less popular in the ranks of spicy lovers, are other hot chili sauces. There are Asian hot sauces – Chinese, Vietnamese, Thai, Japanese and Korean chili sauce. Mexican hot sauces are also popular, as well as the world famous hot tomato ketchup. Most hot sauces are made with the hottest chili peppers, which add flavor and aroma to the sauce, and additives such as tomato sauce, bell peppers, vegetable or fruit pulps can be used to reduce the pungency of the sauce. After all, the hottest pepper in the world has a pungency of more than 3,000,000 units on the Scoville scale – it is unrealistic to use a sauce made from such a pepper in its pure form. In addition, the addition of various fruit or vegetable components to the hot sauce allows you to give it a unique taste and aroma.

Hot peppers or chili peppers – this name brings together many varieties of the tropical plant Capsicum annuum, the fruits of which have a pungent taste. The name chili pepper got not from the name of the country in South America, but from the word from the Aztec language, which translates as red. The pungency of peppers is determined by the Scoville scale, for 2021 the hottest pepper in the world is Pepper X, which, according to its creator, is twice as hot as the previous champion among chili peppers – Carolina Reaper, which had an average pungency of more than 1,500,000 Scovills. Prior to the advent of the Karolinska Reaper, Trinidad Scorpion was the hottest pepper, which had a sharpness of slightly less than 1,500,000 scovills. Many varieties of hot chili peppers are popular in the world – the already mentioned Pepper X, Carolina Reaper and Trinidad Scorpion, as well as Habanero, Jalapeño, Madame Jeanette, Dragon's Breath, Fish Pepper, Naga Viper, Naga Dorset and Naga Jolokia or Bhut Jolokia, Piri-Piri pepper also known as African bird's eye African Devil.
